Recipe: stuffed eggplants

Some time ago I posted on Facebook a photo of my dinner that seemed very yummy to you. You asked me the recipe and so here it is. I cook stuffed eggplants very often on summer because you can prepare them when it's a little less warm and then eat the day after. This is a typical recipe of the Southern Italy, from where I come, and I guess you'll appreciate it very much!

Qualche tempo fa ho pubblicato su Facebook una foto della mia cena, che vi è parsa gustosissima e invitante e me ne avete chiesto la ricetta: eccola qui. Le melanzane ripiene sono un piatto tipico del Meridione, da cui vengo, e che faccio spesso d'estate perchè si preparano di sera, quando fa più fresco, e si mangiano il giorno dopo. Sono sicura che le apprezzerete tanto quanto me!




You need (for 2 people):
- 2 eggplants
- 10 tomatoes "piccadilly"
- 2 eggs
- 1 small baguette
- 4 spoons of grated parmesan
- 1 onion
- mint
- salt, olive oil

Cosa vi serve (per 2 persone):
- 2 melanzane
- 10 pomodori piccadilly
- 2 uova
- 1 panino
- 4 cucchiai di parmigiano grattugiato
- 1 cipolla
- menta
- olio, sale

Soak the bread into the water (better if the bread is from some days ago). Cut eggplants in half along the lenght and private them of the pulp helping with a knife or a spoon.
Chop the onion and saute in a skillet with a little oil. Cut the pulp of the eggplants into small pieces and pour into the skillet with onion, adding oil if needed. Add salt and cover with a lid. Add a sprinkling of mint.
Squeeze the bread and mix well with a wooden spoon in a bowl with sauted eggplant. Add beaten eggs, grated parmesan and tomatoes cutted into small pieces.
Fill eggplant and bake at 200°C for 20 minutes or until a crispy crust will be formed on the surface.
I suggest to not eat them when they're hot, but prepare them in advance and eat them to room temperature!
Plus tip: for a recipe even more tasty, add chopped cheese.

Mettete a bagno il panino dentro l'acqua (meglio se è secco, di qualche giorno). Tagliate in due le melanzane nel senso della lunghezza e privatele della polpa aiutandovi con uno scavino, un cucchiaino o un coltello.
Sminuzzate la cipolla e soffriggetela con un po' d'olio in una padella. Tagliate la polpa delle melanzane a pezzetti  e versateli nella padella insieme alla cipolla, aggiungendo un po' d'olio. Salate e coprite con un coperchio. A fine cottura, aggiungete una spolverata di menta.
Strizzate bene il pane e mescolatelo in una ciotola con le melanzane saltate, le uova sbattute e il parmigiano grattugiato. Da ultimo, aggiungete anche i pomodori tagliati a pezzetti.
Riempite le melanzane e infornatele per circa 20 minuti a 200°C e comunque finchè non si sarà formata una crosticina croccante in superficie.
Preparatele con discreto anticipo e servitele a temperatura ambiente!
Il consiglio in più: nel ripieno aggiungete anche del formaggio in pasta filante tagliato a pezzetti per una ricetta ancora più saporita.

  1. Appena le melanzane torneranno di stagione, prometto che ci provo! Io adoro le melanzane! Intanto ieri sera ho fatto la mousse al ciccolato fondente, con basilico e peperoncino.
    Roba più estiva, ma una goduria!
